Sweet Sundays

Yup, we’re still here…

Now that these cuties are in school, my office cleaned and organized, house back in order, I can get caught up on the girls blog.  So here’s to some speed blogging and catching up with my favorite bloggers!  Some summer happenings for now...

Our summer in a nutshell:

Girls- Soccer camps, Lateovers, Tournaments, Gymnastics, B-day parties, Swimming... Trevor- Drivers Ed, EFY, Care4Kenya, Mountain Biking Team, Scout Camps, Youth Conference…  Family- Cancun, Service projects, BBQ’s, Backyard Camping…  Me- Education Week, Soccer Mom, Chauffeur, Enrichment Counselor, Teacher, enjoying my family!

It’s been a great summer, looking forward to keeping the memories alive!  Hope you all (my whole 2 readers left, jkWinking smile) had a wonderful summer!!

Having a sister…

We thoroughly enjoyed watching the girls and other children in the Primary Program today.  They were looking forward to the program, they knew their parts well and enjoyed singing with their classes.  What sweet spirits!  We couldn’t help but silently chuckle at Sophie (she was in front center and wasn’t in a smiley mood like she is above), so whenever she looked at us she gave a quick smile or raised her expressive eyebrows to please us, then right back to her serious  look, but at least she sang.  And Sage was her happy self enjoying singing & performing (not like above, I was lucky to catch a glimpse of a smile from her then, they take turns smiling ;).  It’s also nice seeing my boys bless & pass the sacrament each week, looking sharp, always willing to help where needed.  Such blessings!

Like mother, like daughter~

Sophie and Sage used to always dress like me.  They would see what I was wearing in the morning and pick out matching colors and matching styles for themselves, lol.  If I wanted them to wear more dresses, I had wear dresses.  Then they went through a soccer phase and wanted to wear comfy soccer clothes and now they wear uniforms to school (love it), so it’s fun to see them dress up once in awhile.  One thing’s for sure, they have their own style now and are very particular about their shoes! :)

Sweet Sundays

I heart Sundays. It doesn't always seem like a day of rest, but it's a day I look forward to and need each week. A day to slow down and show gratitude for our many blessings.

Paul has perfected the BBQ, much better then the cooked Rotisserie's from Costco. Way to go Paul, you've got the touch! Thanks for giving me a break and BBQing some tasty dinners lately, it's been delicious. I've also had the domestic bug, cooking Taco soup, slow cooker beef stew, and Lasagna last week.


Here's a favorite...


Taco Soup
1-2 pounds lean ground beef
1 small onion, chopped
1 (1 ounce) package taco seasoning mix
2 (8 ounce) cans tomato sauce
1 (15 ounce) can diced tomatoes
1 (15 ounce) can whole kernel corn, not drained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can black beans, drained
1-2 cups of water
6 cups corn tortilla chips
1 cup shredded Cheddar cheese
1/2 cup chopped green onion
Sour cream
DIRECTIONS
1. In a skillet over medium heat, brown beef and onion together; drain. Place beef mixture in slow cooker with taco seasoning, tomato sauce, corn, and beans.
2. Cover, and cook on Low 4 hours. Top with cheese, green onions, and sour cream; serve with tortilla chips.
Serves six-eight

Simple, good, & healthy. I use cloves of garlic with the hamburger and onion powder instead of onions to make it kid (and husband) friendly. If you add two cups of water, you'll want more taco seasoning to keep it a little spicy.
